Our house was a whirlwind of cooking this weekend! I cooked up the equivalent of 5 cans of pumpkin puree, a batch of tasty cookies (you'll read about those later this week!), roasted some pumpkin seeds, made a pumpkin cake so not all the pumpkin puree would end up in the freezer, plus made a batch of yogurt in the crockpot. Visions of pumpkin cheesecake are dancing in my head! Must save that thought for later, though :)
The treat recipe I tried last week was a hit with my family! I'll definitely be making Chocolate Chip Cookie Bars with a Salty Pretzel Crust again. Also, my first time making lasagne in the crockpot was very successful, not to mention tasty! Thanks for the recipe, Frugal Upstate!
As I plan my menu this week, I'm looking carefully at my freezer and frig to see what I can use up before Thanksgiving week. With all our tomatoes plus a small turkey I picked up (just for our family) on sale, my freezer is already pretty full, so I'm looking to use up some odds and ends as well as our bounty of acorn squash and tomato sauce made from tomatoes from our garden. I want to make sure nothing is going to waste. Here's my menu for this week!
Sunday: J's Pulled Pork, from Home for Three
Monday: Pasta with Winter Squash and Tomatoes
I'm planning to add feta cheese to this dish this week.
Tuesday: Broccoli and Ham Quiche
Wednesday: Leftover night
Thursday: Grill Night
Friday: Homemade Pizza Night
Saturday: Lentil and Sausage Stew with Potatoes, Carrots, and Onions
