Recipe: Cookies and Creme Cookies

This week I have a very special cookie to share with you. If you love chocolate, you will love this one. If you loved those cream-filled chocolate cookies (you know the ones!), you will love this one. I love that it's a classic combination, but a wonderful surprise if you are not expecting what's inside! This Cookies and Creme cookie recipe is based on the one from Cookies and Cups. I will definitely be making more of these this holiday season. Don't they look amazing?

Here's how I made them:

First, mix together your dry ingredients. I didn't take a picture of that... oops! Just imagine.. three white powders mixed together. Ok, enough of that!

Next, measure room temperature butter and sugar into your mixing bowl.

Beat until light and fluffy! I always scrape down the sides of my bowl at every opportunity.

Add eggs and vanilla.

Beat until creamy and well combined.

Add your cocoa powder. Start your mixer very carefully... or you'll have cocoa powder everywhere! Slowly, mix until fully incorporated.


Next, add your dry ingredients, one third or one fourth at a time, mixing each portion just until mixed in.

Now you're ready for your cookies and creme candy. Can you guess where these were from? I needed to chop these up to make them a bit smaller, but not too small! I want nice big chunks in the cookie.

I figured a way to chop them up into roughly 4 equal parts. When I had enough, I was ready to stir them into the cookie mix.

Drop by tablespoonfuls onto your parchment-lined or silpat lined baking sheet. Bake for 12-14 minutes - do not overcook!

After cooling for 2 minutes on the baking sheet, move to your cooling rack.

Enjoy!



If they last that long, store them in a tightly closed container.
Cookies and Creme Cookies

Ingredients

  • 2 1/4 cups all purpose flour
  • 1/4 tsp salt
  • 1 teaspoon baking powder
  • 1 cup butter 
  • 1 1/4 cups white sugar
  • 2 eggs
  • 1 1/2 tsp. vanilla
  • 1/2 cup unsweetened cocoa powder 
  • 2 cups coarsely chopped cookies and creme candy (look for store brands to cut the cost on this recipe)
Preparation
  1. Preheat oven to 350 degrees F.
  2. In a small bowl, mix flour, baking powder, and salt until well combined. Set aside.
  3. Cream together butter and sugar in large mixing bowl until light and fluffy.
  4. Beat in eggs and vanilla until creamy.
  5. Add cocoa powder - Mix on LOW until completely mixed in.
  6. Add dry ingredients one third at a time, mixing each portion just until fully incorporated.
  7. Gently stir in your cookies and creme candy.
  8. Drop by large tablespoonful on a parchment lined baking sheet.
  9. Bake for approximately 12-14 minutes or until edges are set.
  10. Allow cookies to cool on the baking sheet for 2-3 minutes before transferring to wire rack to finish cooling.

  1. Oh my goodness, these look delicious! What a good use for those candies, too, which really aren't all that great on their own. (They are probably much better in these cookies!)
