If
you don't usually menu plan, this might be the week for you to
jump in! Long before I started planned weekly meals, I would always plan
Christmas Eve dinner. Our family has a twist on the traditional Polish Christmas Eve
dinner, which means lots of seafood. Due to the cost of ingredients I need to be sure to plan carefully. I save my plans from year to year,
so I don't have to start from scratch -- just a tweak here or there.
Here's my plan for this week!
Monday: Brown Rice & Black Bean Casserole
Make Ahead: Cookies (Chocolate Rolo Cookies, Cranberry Chocolate Oatmeal Cookies, Jam Thumbprints), Spinach Dip and Cheeseball (the boys help with these!)
Tuesday (Christmas Eve): Appetizers (home made cheeseball, spinach dip, smoked salmon, cranberry
goat cheese), Seafood Au Gratin, Kluskis with sauerkraut, Mixed
Green Salad, dried fruit compote, rolls, dessert (gelato,
cookies).
Wednesday: Christmas Breakfast Casserole, Munch on leftovers the rest of the day
Thursday: Black Bean, Kale, and Mushroom Enchiladas
Friday: Homemade Pizza night
Saturday: Pesto pasta tossed with veggies
Sunday: Ham, mashed parsnips and potatoes, green salad
